Hearty Hamburger Soup with crusty bread - easy and delicious for a cold day

Well, last Saturday we were slopping on sunscreen at the Oakland A’s game and this Saturday we are nestled up inside to avoid the snow. Even if I wanted to go outside, I should not as I absolutely refuse to put on my winter coat until November 2014. Luckily, much of the snow is melting upon impact but we are over a month into spring and I do not think we have had a single week without snowflakes falling.

I took the no complaining to heart and made Hearty Hamburger Soup for lunch today. The soup will warm your insides with lots of vegetables, hamburger, brown beans and bacon, because, well, everything is better with bacon! ;)

Hamburger Soup
I can't tell you how many times I have made this soup! This quick and easy soup is perfect to keep you warm on a cold winter day.
Recipe type: Soup
Serves: 8
  • 5 or 6 slices bacon
  • 1 pound lean ground beef
  • 1 teaspoon olive oil
  • 1 medium sized white onion, diced
  • 4 cloves garlic
  • 1 sweet potato, cut into one inch cubes
  • 4 carrots, sliced into ½ inch thick coins
  • 2 medium sized tomatoes, diced (or one 14 ounce can of diced tomatoes)
  • 5 cups water
  • 2 cups beef broth
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • 1 teaspoon oregano
  • 1 can brown beans
  1. In a skillet, cook the bacon until crisp. Remove from the skillet and pat the grease off with a paper towel. When cool, crumble or cut the bacon into small pieces.
  2. Meanwhile, in a large stockpot, add the ground beef and olive oil and brown on medium high heat for eight minutes.
  3. Add the onion, garlic and crumbled bacon to the pot and saute with the ground beef for five minutes on medium heat.
  4. Add the sweet potatoes, carrots, tomatoes, water, beef broth, salt, pepper and oregano to the pot and bring to a boil. Reduce the heat to low and simmer, covered, for 30 minutes until the vegetables are tender.
  5. Add the can of brown beans and cook for five minutes more.
  6. Season with salt and pepper to taste and serve with a slice of bread.
